
Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
A shake (about 1/8 teaspoon) of the following spices, or whatever looks good in your pantry:
- Salt
- Black pepper
- Dried thyme
- Dried basil
- Turmeric
- Onion powder
- Red pepper flakes
1 can (15-ish ounces) chickpeas, drained and rinsed
1/2 cup water
1 can (15-ish ounces) tomato soup
Instructions
- Heat olive oil in a small saucepan on medium high heat.
- Once oil is hot, add spices and stir until fragrant, about 30 seconds.
- Add garlic and cook until golden brown, about one minute.
- Add chickpeas. Stir and cook for another 30 seconds.
- Add water. Cover and simmer for 10 minutes. If you’d like, crush up to one quarter of the chickpeas with the back of a spoon.
- Add tomato soup and stir.
- Cover and simmer for 5 minutes
- Serve hot, with a hearty slice of toasted bread.

If you don’t have the time or energy to do more than dump a can of soup into a bowl and stick that bowl in the microwave, that’s ok! I’ve totally been there. But if you feel up to turning on the stove, I recommend following this recipe. The results of this thrown-together concoction are so shockingly good, I don’t honestly know if I’d ever bother making this from scratch. I hope you enjoy!
